Hey y’all, I’m Karen — my kids are grown and flown, I’m inching toward retirement age, and now I’m carving out a little space to build something just for me — starting with this blog.
Around here, you’ll find a lot of food and a little lifestyle. I’m a full-on sourdough enthusiast (seriously obsessed), but ironically, I’m also considering easing back into a low-carb lifestyle… while still keeping sourdough in the mix. Yes, I believe it can be done.
Lately, I’ve been working on a budget meal plan for my son in college. He loves to cook but doesn’t always have time — and honestly, neither do I. I still work a full-time job and also have a cottage home bakery business.
So, this first part of the blog will be all about that meal plan: tasty, budget-friendly meals using canned, packaged, and frozen foods — the kind of stuff that stretches your dollars and your time.
I’ll be sharing what’s working for me in real life. This plan might not be everyone’s cup of tea — for example, I make mashed potatoes my family swears are famous… but yes, I use instant (and even canned) in this plan. Don’t come for me. We repeat some snacks and breakfasts, and I rotate proteins, so we’re not stuck in a chicken rut. It’s practical, affordable, and yes — delicious enough for picky grown kids and tired mamas alike.
I’ll have a section for ‘from scratch’ things, too. For years, I have made my own taco seasoning, salad dressings, alfredo sauce, etc… Soon, you will see these show up.
If anything in here helps you – well…that makes my day.
